Watermelon Recipes for Your Liberty Towers Kitchen

Watermelon is a favorite fruit for many and unfortunately is only in season for a short period of time during the year. Luckily that season is here, but it won’t last too much longer as we are quickly making our way through the summer months. Here our some recipes for our residents at Liberty Towers that they can make using delicious refreshing Watermelon this summer. You can get the freshest produce at one of our local farmers markets.


Watermelon Tomato Salsa: This recipe for watermelon salsa combines other fun fresh ingredients such as tomato, pepper, onion and cantaloupe to make the perfect balance of spicy and fresh. Watermelon Sorbet: Using just five ingredients, you can have a tasty watermelon dessert ready to serve to guests or if you are in a dessert mood yourself! This recipe is easy to follow and calls for 6 cups of fresh watermelon.


Watermelon Salad: This watermelon salad recipe featured on Real Simple’s website, combines mint and prosciutto to create a refreshing side dish, perfect at any BBQ or for an outdoor event. This recipe calls for a 25 minute prep and cook period and has several other ingredients that you can adjust the serving size or choose not to use– depending on your preference with spices and seasonings!


Watermelon Rind Relish: If you are looking for a recipe to use up parts of a watermelon you would traditionally throw out, this creative recipe uses the rinds as a main ingredient adding an extra kick to the dish.
